Kefir grains are a soft gelatinous biological mass, comprised of protein, lipids and a soluble-polsaccharide, the kefiran complex, that surrounds yeast and bacteria in the kefir grain. They look like cottage cheese or little cauliflower florets that are bouncy and squishy. These wonderful little “grains” help to transform milk into a 99% lactose-free, probiotic rich, drinkable yogurt and can be used in many beverages.
